On my 2000 Lincoln LS, V-8, at what temperature reading (degree) does the Cylinder Head Temperature sensor send a signal to the PCM to shut the engine down?

I believe that it is somewhere north of 230 F that failsafe cooling is triggered. The sensor gives an analog value indicating actual temperature. It doesn't tell the PCM to do anything. The PCM decides for itself based on its sensors.

Here's a chart of the CHT voltage to expect vs engine temperature. Note that you have to measure the voltage with the sensor plugged in and the PCM powered.
