Problems with removing catalytic converter?

We have a first generation 1995 Mark VIII that has a clogged cat. We were thinking of removing the cats and putting straight pipes. What if any problem would arise from doing this? One cat has a temp of 300 degrees and the other has a temp of 900 degrees.
 
That's not gonna work very well on one side because it's part of the manifold. It's a real bish to do anything to that side. You could hollow them out but from what I hear, it's more of a headache than it's worth. I bet you could find an unclogged cat for pretty cheap here.
 
Borrowed from Mannieg's thread. This is what our local vegas shop did for him. Best of both worlds. Manifold is modified and it has cats.

How would you ever get the exhaust off of that car??? looks to me like the pipe is directly welded to the manifold? I've seen someone on here say before that the drivers side manifold is stainless, and the flange can be cut off the cat, and welded directly to the manifold, creating a "normal" looking manifold...
