Tires for CDC 18x8.5 wheels

What is the widest tire that I can safely put on a stock height 02 LS. I am getting ready to install a set of CDC 18 x 8.5" wheels on my 02 LS. My wife drives this car all seasons so I am looking for a M&S tire. Do they make a tire that corners and works in light snow? Also the tire diameter is important so not to throw speedometer off or can it be adjusted? Sorry about all the questions just don't want to buy the wrong tire.

I don't think that I'd go wider than a 245 series on the 8.5" wide wheel. Especially since the offset on the CDC wheels are around 36mm.
