I have been havig an on going issue with my A/C system and I am not sure why. During the summer or winter it is not much of an issue because i need either cold air or hot air. But during the in between months like now, it is VERY ANNOYING! My A/C seems to only blow hot air or cold air, no in between. So in the morning when its cool , I set the temp in the car for 75 degrees. It will blow HOT AIR like I want 100 degrees. So I will lower the temp, but it wont change until I get to the lowest5 temp setting of 60 degrees, then it blows COLD! What could this be?

Either a sticky DCCV or bad headunit, or bad temperature sensors in the ductwork. Run a selftest on the AC and see what it says. It won't be able to detect a sticky DCCV, but it should pick up on any of the other possible problems.

With the car on and the AC system off, hold the OFF and FLOOR buttons in for a few seconds, then release them and press auto quickly. A self test will run. If it ends in all "8"s on the display, then everything passed. If not, it will display error codes.
I ran the test in question and all 8's appeared. At this point like I said, I can either get COLD air or HOT air. Nothing in between. Any ideas, it is pretty frustrating especially in South Texas where it never gets too cold in the winter. So I am either freezing and the A/C is blowing or I am sweating with the heater blowing fire!!!!!!!

I think that points you more in the direction of a sticky DCCV. Is the air temperature being output always the same on both sides of the car, or do you sometimes have cold air on one side and hot air on the other? If it's different on both sides, it points even more to the DCCV.
If you haven't had a full coolant flush, refill, and bleed done, you might want to start with that. (It might free up the sticky valve.) Of course, if you end up replacing the valve, you'll have to refill and bleed the cooling system again.
Also, check the AC compressor while the climate control is on. With the blower set to high, the AC compressor should run most of the time. If it cycles off for more than a couple of seconds, your problem might be low freon.

Let me try to clear it up a bit. When I get in the car and turn it on the a/c system is set at 74 degrees for the whole car and it is set to auto. as I get rolling down the street I notice that even though it is 59 degrees outside (lets say) the A/C is blowing COLD, not cool, but COLD!!!!
In order for me to get it warm I have to set the car to the highest (I think 90 degrees) in order for it to change from COLD to HOT. And then It just GETS HOT!!!!. Of course then the fan is blowing as hard as it can and the air is hot like FIRE!. So I manually have to turn the fan to the lowest speed but still the air is too hot, so I have to crack my windows or sunroof.
What could be the prob???????

The climate control system is very complicated, and too difficult to remotely diagnose. The DCCV seems to be the most common source of problems with it, but there are sometimes other problems too. You may need to pay a dealer to diagnose the problem for you this time. The Ford specific scan tool can read out the sensors and statuses of the climate control in real time, that should make it possible to figure out what is going wrong.
Of course, given that your car is over six years old, I think it might still be a wise step to change out the DCCV first. Even if it is not the problem now, it is still probably due for failure soon.
