could bad coils or plugs cause car to run lean , stall out, engine race?

Yes (not the lean part)but it's probably not your problem
Sounds like the may need just a general tune up

I put in all new motocraft plat tip plugs a k&n air filter but still has the same issue

Tune up also would include
Check Pcv, iac, look for vacume leaks
Clean mas.
Possible need o2s

Looked for vacuum leaks didn't find any but haven't looked at o2 sensors might be a kinked fuel line

I believe it’s the fuel pump that went

K&N filets, the quick way to kill a MAF. I can't believe people still install those horrible things.
