Where is the pcv valve located the V8? How much HP can the stock rearend handle?

There is no PCV valve on the V8s.

And it's more a question of how much HP/TQ the rear half shafts can take first. Nobody's ever really been to that point.....yet.

I've heard that they can only handle about 300HP. Have other people been having trans problems?

right - it's not HP but Torque.

the 5R55N is a 5 speed non-syncro trannie that can handle 550ft/lbs

Remember the your torque converter multiplies the engine torque from a max of 2-to-1 to a min of 1-to-1 once it locks. So the key is to overlay your torque curve over the converter lockup and ensure that you never surpass it.

We are able to get over 400ft/lbs to the rearwheels now but never past the 550 mark before the lock....

The new Mustang uses a 5R55S - and they are getting big power out of those now - Level 10 is making some kits now I believe (even a ADO swap) -> http://www.levelten.com/index.html .

The limit of the stock 8" open diff is more likely an abuse issue than a pure torque issue. pounding the go peddle from a standing stop with a power adder is more like to break it than a careful WOT run. But since we can drop a 8.8" LSD into it - there is a cheap and easy upgrade.
