I can take a 02 steering wheel and change out the horn pad switch with my gen 2 horn pad switch and put it into my 05 right?

Swap it all around.
The connector PCB with the contacts for the horn.
The two steering wheel button pads.
The air bag.

So I just would need to completely gut the 1st gen steering wheel and put EVERYTHING from my second gen on there. And would I also still be able to use my airbag.

Correct. I did this on my 04.

Oh just leave the airbag out. It only hurts for a little while.

The real truth is that you don't ever what to be in a situation that would trigger the airbag. However, if you are ever in such a situation, you very much do want that airbag to function.
