What can I do to stop the throttle from sticking in my 2000 V8 LS?:

When does it stick?

Mine would stick at idle, and it would take a bump to get the throttle to open.

I cleaned out my throttle body with a clean dry paper towel and that fixed it.

You could also check to make sure the throttle cable isn't binding where it comes through the firewall or at the throttle body.

Clean the throttle body with throttle body cleaner inside and out

Change the COPs and plugs. After that doesn't work, clean the throttle body. Be careful to not allow any cleaner to run into the throttle position sensor as the cleaner can seep in through the bushing and damage it.
